Recipe On Demand

Tonight I wanted to make a meatless dish and I was craving pasta.  So here is what I did.

Finely chopped a half onion
Diced 2 small zucchinis
1 jar of sliced mushrooms (fresh would be great)
About 1.5 cups of veggie broth
1 can of quartered artichokes
About 7 fresh cloves of garlic - pressed
1 lemon
Rock salt and fresh ground pepper to taste
Parm cheese as a topping

I sauteed the onions in olive oil and pressed in the garlic. As they started to clear, I put in the mushrooms and zucchinii, salt, pepper.  Sauteed for a few minutes.

Add the broth, juice from the lemon and artichokes.  Simmer a few minutes.

Serve over your favorite pasta and enjoy!
