I do not consider myself a baker or a dessert maker. I do like to cook and try new things. So I thought I would make an attempt at these apple roses. I overcooked them a bit, but they were still tasty. The recipe is below.
2 medium sized red apples, cored, quartered and sliced thinly
Lemon juice from 1/2 lemon
3 tbsp apricot preserves
Puff pastry sheets
Put apples in a bowl of water and lemon juice and microwave for 3 mins. (The idea is to soften the apples to make them more pliable)
Put apricot preserves with 2 tbsp of water and microwave for 1 min and stir.
Take pastry sheet and roll it out to thin it out. Cut into 6 strips.
Spread the apricot mixture on each pastry strip. Sprinkle with cinnamon. Lay out the apples, with the skin side hanging off the edge of the pastry by about 1/4 inch. Fold the pastry dough from the opposite side of the apples basically in half and covering the bottom side of the apples. Then carefully roll up the strip and place in the muffin tin.
Cook for about 40 mins at 375. Watch carefully to make sure you do not burn. To prevent burning you could lay a sheet of foil on top of the roses. I have did not do that and wish I had.
Sprinkle with powdered sugar for nice presentation. (I did not do this step.)
