Was out grocery shopping today and I got a wild hair about making stuffed peppers tonight. I already had some rice and homemade sauce at home. Bought some low-fat ground turkey, sauteed it with onion, red pepper, mushrooms, and garlic. Then stuffed the mixture into the peppers and topped them with some of the fresh sauce that was in the pan. I included some before and after pix. It was quite yummy! Recipe below.
4 bell peppers of your choosing
1/2 yellow onion diced finely
1 cup fresh mushrooms diced
3-4 cups of steamed rice
1 lb lowfat ground turkey
4 cups of one of your favorite red sauces
2 cups of your favorite salsa
fresh garlic cloves
salt and pepper
(optional) some type of favorite cheese to put on top.
I cut the crowns off the peppers and take out seeds and then bake them in the over at 350 for 25 minutes. I sauteed the onion, mushrooms and garlic for a couple of minutes. Add the turkey meat and brown it completely. Add salt and pepper.
When this mixture is cooked, toss it the salsa and the rice. Mix well.
Put the mixture into each of the peppers. Pour your red sauce into the pan and even it out. Place the peppers on the sauce and then spoon a bit of the sauce on top of the peppers. This would be a good time to put cheese on top if you want to add cheese to the dish. I am not eating any dairy for a few weeks, so I excluded the cheese on mine.
Bake in oven another 25 minutes.
